This is a great way to add vegetables to a meal: it takes seconds to prepare and can then bake in the oven while you focus on the rest of the meal. Plus, it only requires ingredients you always have in your pantry.

  • 1 big tomato1
  • olive oil
  • a pinch of salt
  • rub the tomato in olive oil
  • place it in a ramekin2
  • cover it with a generous3 sprinkle of salt
  • cook in the oven until the tomato is burning hot to the touch

This is my extreme simplification of tomates farcies, a classic stuffed tomatoes recipe, stripping away the meat filling to make it as lazy as possible.
