Technically, this is more of a scrambled eggs recipe… But it is a great way to add delicious eggs to a dish in a matter of minutes.

  • 1 or 2 eggs (depending on your needs)
  • 1 big tablespoon of salted butter per egg
  • seasoning1
  • break the eggs into a cold pan
  • add the finely diced butter
  • add the seasoning
  • go up to medium heat2
  • stir continuously, never stopping, until cooked (about 2 minutes)
  • stop when the eggs are just shy of your preferred doneness3 and serve immediately

This is a personal recipe, born out of wanting to make an omelette-style dish as delicious and fast to put together as I could.

  1. Any one of miso, soy sauce (this will give you a greyish omelette) or gochujang (for a more orange spicy omelette) works great. I have also been happy cooking the eggs in a still somewhat saucy pan that I had just used to cook the main dish. A crack of fresh pepper is always welcome too. ↩︎

  2. It should feel a little too low. You know you got the temperature right if the egg at the bottom of the pan does not instantly start cooking, but the butter starts melting. ↩︎

  3. They will keep cooking by themselves, even off the heat. ↩︎
